In Bulgaria, sunflower honey is quite popular, as sunflower is predominant in a number of fields, and during the sunflower blooming season (July), bee colonies are usually most active, taking full advantage of the forage, which leads to much higher yields per a beehive. This automatically makes people consider sunflower honey "common". In fact, one can say exactly the opposite of this unusual and unfairly underestimated honey.
Few people know that sunflower honey is absolutely pure. Harmful substances and pollutants from the soil are retained in the sunflower stem and so the nectar that bees collect remains intact. It is also due to the fact that sunflower crops are not treated with insecticides.
It is hard to tell which kind of honey is the best because all varieties are unique, having their own range of qualities. Yet, sunflower honey can definitely be ranked among the best.
It crystallizes quite fast (for about 20 days), but because of the high levels of glucose, its taste sometimes resembles that of the white sugar (without the bees having been fed with such), and perhaps this is one of the reasons why it is not the consumers’ favorite. It is important to know that the consumption of crystallized honey, not only sunflower honey, has its advantages. Due to the slower melt of the crystals in the mouth, a number of nutrients go faster into the body system through the sublingual glands.
Sunflower honey has a healing effect with respect to gastrointestinal diseases, the respiratory system, the kidneys, skin problems, but it is useful especially for the heart and the circulatory system, and is a valuable tool in the prevention and fight against cardiovascular diseases. In combination with red wine, it is an excellent tool to improve blood circulation, and has a tangible effect on people with cold limbs.
It is useful for the rapid healing of wounds, burns, and for the treatment of dermatitis, rhinitis and sinusitis.
It stimulates the immune system and is suitable for adolescents and adults.
Just like the other kinds of honey, it has antibacterial functions.
Its color may vary from light yellow to dark yellow, or golden. It has fresh flavor. Sunflower honey undergoes a fast crystallization process (from 20 days to 2 months), as in most cases the whole texture hardens, forming fine-grained crystals.
